Does it make a difference to what computer you are using when you are capturing video from your camera? Does it make any difference in quality if the computer had less things than another computer?

Not if you're capturing digital video over Firewire.
I am capturing video from a DCR-Vx2100 MiniDV camcorder through a firewire. If I am not mistaken, this should produce the same quality if it were captured on any other computer, right?

The capture quality will be the same yes. It might look different from computer to computer due to the quality of different monitors resolution. But if its DV quality on the camera - its DV quality coming through onto your computer!
The main hardware issue on slow computers relates to the rendering process when you're finished editing.
