I hope to film something soon which I want to be in black and white. I am not sure whether I should FILM it in black and white, or film it in colour and CHANGE it to black and white whilst editing.
Any suggestions?
Since you emphasize ?FILM? do you mean you are shooting on film?
If that?s the case, then definitely shoot B&W stock. You will need to light B&W very differently than color. And there are different stocks to choose from - each giving you a different look. And there are different filters you will need to use to get the look you want.
I love shooting in B&W. There?s more to good B&W cinematography than just turning off the color in post.

No, sorry I should have stated first:
I'm shooting on MiniDV format.
If you're sure it's going to be black-and-white in the finished movie, I'd shoot using black-and-white mode on the camera: that way at least you can see what you're going to get in the end. Otherwise shoot colour but at least use the black-and-white mode to check that you'll have a good black-and-white image.
Thanks for the advice guys. I think I've decided to shoot in colour and change it to B&W later on. That way if I need a colour image for a still or something, I'll have it. I will check what it looks like on B&W first though, and make sure the lighting is correct, so it will look good when changed later. Thanks again.
