I am just wondering if anyone knows any good techniques on creating practical blood effects (very quick spurts), that would be useful for a knife fight sequence.

How about a small packet of blood on the knife handle attached to a small clear tube aimed at the blade. When the actor swings the knife he can squeeze the packet and get a nice arc of blood to squirt out on the knife and on the other actor. Just be smart with the camera angles and use a nice sound effect to sell it.

do u mean knife effects or stabbing effects. I once did a cool effect with a blunted flick knife. insert a small bag of fake blood inside, when one actor pushes it agains another in bursts the bag macking it apear as if its peirced him.
