I first of all need to shoot a person in the head at a close view and i need brains to splatter like in "saving private ryan" but I have no idea how.I also need to shoot a scene of a car ramming into a tree and a guy flying through the windshield,any ideas how???

Coming from a "low to no budget" filmmaker, Apple sauce and food coloring makes great brains. It works better if you make the sauce yourself from real apples.
Lightly beat the apples without breaking the skin, then inject the food coloring.

An older film on our site called 'Scope' has a very quick shot of someone going over the bonet of a car, this was done with a really badly constructed green screen and a bit of time in Adobe After Effects, and again it doesn't look too bad!

Hey, if you want a decent looking head shot, check out 'Shawn of the Dead'. There's a head basically exploding from a gun shot from behind. The special features has a pretty detailed explanation of how they did it, too.
