how can i make a shot completely black and white, but make one object in the shot full color?

Use a green screen to shoot the object or the person that you want in color. When that is done, whatever editing software you're using will have a green screen mode and a mix mode. select those modes and mix the two videos together, (the object that you have in color with the object that you have in black and white.) A lot of the results and what you can do depends on the editing software you're using and with what you do in post-production.

Shoot the whole thing in color. Duplicate the shots into two identical layers in your editing software. Turn the upper layer into black and white but leave the lower layer in color. Use a mask to make an object in the top layer invisible so the same object in the color layer beneath shows through.
I haven't done this myself but in theory it should work if you don't have a lot of camera movement to force the mask to move around.

I have done what rjschwarz has done for a commercial before and it worked. It took a while to animate the mask, but it worked.
