I basically want to get a single shot of a guy being thrown off a rooftop (about two floors high) without using camera trickery or anything. Now the most obvious thing that pops out in my mind is "crash mats" but that would be naive to think that's all there is to it. How would I go about getting permissions and getting a suitable location in which to do this? Have you arranged similar stunt work in the past? who would I need to approach (besides the property owner) about arranging such a shoot? Obviously health and safety is vital so things like the surface area of crash mats (or whatever would be used instead of these) would need to be figured out properly and the mechanics of the fall itself would ave to be figured out so that our guy doesn't break his neck or anything. If you know a stuntman who you could put me into contact with regarding this physical aspect of the matter, that would be helpful. As for the organizing side, how could I go about this and what are the chances of it actually being able to be done?

I hate to say it, but what is the point? Unless your movie is staring Jackie Chan nobody really expects crazy/dangerous stunts. How does having it all in one shot really bring the story forward? Maybe I'm missing something but it seems like a lot of risk for minimal gain.
Hire a professional stuntman and he'll tell you what can be done and how. Anything less than that is sort of irresponsible. Either that or:
Do it with CGI if you need the shot to promote the story somehow.
Do it with a dummy and/or cuts or using reaction shots otherwise.
Just my opnion of course.
