Pinnacle Studio has an editing option where you can convert to black and white. It does a decent job.

I'm not sure how you're editing it (whether on a computer or from one VCR to another). If you're trying to edit the old fashioned way by connecting one vcr to another through RCA cords, you might check the VCR's and see if there is a saturation or color setting on either of them. I know that a lot of newer units have done away with these settings, but many older models had these functions. If you're plugging an old beast of a VCR into a computer to edit, then most editing programs worth their bits and bites will have the ability to change the video into black and white. Another method (if you have an older VHS video camera), it should have a black and white option, which you can then run into a VCR to record 'voila' without any color.
