I have a light pink background sky and I need to put some credits on it, is there a certain way I need to go about picking the colors of the font? Either black or white? Or White with a small black shadow? Does this make sense to anyone? I'm using Avid Xpress DV.
I have a light background color and I need to put a credit on it, do I make the font, black or white with a black shadow? or what?

If you make it white with a shadow (actually you want the RGB to be more like 235, 235, 235 to not get burnt-out on a TV) then you should be OK. You could use black, but white is more traditional :).
