Kelly Baker is an indie filmmaker who has done sound design on many a major motion picture. He just released a sound workbook that I believe covers both pro and post.
I haven't read it yet, but I have been to Kelly's seminar on sound and I can vouch for that.
One of the first books I read when getting into sound was 'Designing Sound For Animation'.
Nice and simple, I still flick through it now, if only for fun.
