What is it called when you shoot on a green screen and then use something to replace the green for a different background? Is it called a matte? or what?

What you are describing is actually called green screen shooting.

You set the colour matte, in your compositing or editing package, to the colour you want to remove. Any colour can be used depending on things like costume, make-up etc. The bright green is commonly used as it isn't found very often, inless you're shooting the sequel to The Mask. Then you would use something else, like blue or red. There is also a technique called luma screen.

Similar to green screen, luma screen uses a special backdrop that has a significant luma value, which is then removed in a similar way.

Related question, what is the difference between Greenscreening and Chroma Key (Kroma Key)? Seems to be the same thing to me.

I think greenscreening is the actual production technique and chromakey is what you use in post to achieve/complete the technique. But someone please correct me if I'm wrong.

They are the same thing.

Chroma key is the proper term for green screen. What you are doing is removing a certain chromatic (colour) profile, such as green, from the frame.
