Color to black & white shots, color in B&W & grain

First of all, how can you hold 1 color in a black & white image? The Sony HVR-Z1U shows it in its manual and calls it color extraction. So for example, have a black & white image with a child with a balloon, with only the balloon having a red color, the rest being black & white.

Secondly, if I want to change from black & white to color in a few seconds, which setting should I change? It is hue, saturation, a combination of factors and settings? Is there a tool for this?

Finally, which tools are there to add grain to a film?

With regards to adding grain in post, there are loads of plugins for NLEs like Premiere, Avid, Final Cut and After Effects, for example, DigiEffects CineLook, FilmFx etc.
