So after talking with some people about my first film, they said that just doing straight interviews and splicing clips can get very boring. But maybe shooting some other footage and "layer" their voice over top of the new scene can be interesting. Is that called, "overdubbing"...
But I also need ideas on what to put in. MY film is just people telling stories about funny shit that has happened to them. I want to keep their voice on tape but record other stuff. I guess my question is..what could I shoot that would make sense and not look like a corny recreation.

No. That's called "voice over". Overdubing is a term used by recordists in music production. It's when you add a supplementary recorded sound to a previously recorded performance.

What you show depends upon what the stories are about. War stories and prom night memories will be treated differently. Outside of recreations the standard techniques is to show photos (often zoomming or moving to give some life) or to show other things such as the person's hands (if clenched for example). You really don't have many options though.
Watch a Michael Moore movie, love him or hate him he's an expert at making documentaries entertaining. There has to be some techniques used in political documentaries that you could use to ad life because politics tends to be boring I bet he's used most of the tricks in his latest. Bits of animation, totally black screen for a moment.

See if any of them have videos of it. And you could make good reenactments, but it really depends on what the story is.
Other than that, I'm at a loss. Animation would seem out of place, as would just random scenery or something to that effect.
Maybe you could integrate it into something else, say a comedy. Or just keep the stories short and snappy.
And don't sit the people down like a PBS documentary, catch them in action, get them into a group of friends. The more the merrier.
Maybe have them all chilling around a fire and talking about it then have them go on an adventure to destroy the Ring of Power. I dunno, I think it would be funny.
