I understand that there are a number of different types of film but generally, how to you tranfer from film to digital so it can be edited in a program such as avid or final cut pro?

You pay the lab to do it. They run the film through a telecine machine which, at the simplest level, is basically a projector pointing into a video camera.
Or if you're rich, you get them to scan it into a computer at up to 4k pixels wide.
