Advice needed for kit for travelling documentary

Hello,

Two colleagues of mine and I are trying to plan and put together a short documentary, featuring my friend doing some cycling over a few months - probably around five or six at the least - and interviewing interesting and quirky travellers along the way. The film is going to feature a combination of travelling footage, as well as static interviews. We've put together a list of gear we think we're going to need, but we could really use some advice, we're not too sure on a few things.

Camera
Canon 600D
GoPro HD Helmet Hero

Lenses (possible)
Canon EF-S 18-135mm
Canon EF 50mm f1.8
Tokina AF11-16mm F/2.8

Fancier FTV-50 Rig

Rode Video MicPro
Radio mics?

Rotolight LED ringlight

We know it's quite a lot, but we're keen on making this look as professional as possible, and the bike's going to be geared up to carry a lot. Still, we want to make sure our choices reflect consideration for both quality as well as practicality, particularly weight/size considerations.

Any advice would be greatly appreciated!
